1 block of Tofu
Few Strips of Nori Seaweeds
1 cup of flour
2 teaspoon of cream of mushroom flour
1 cup of water
salt and pepper
cooking oil

Vegetarian Chicken Nuggets

Are you a vegetarian starter who still loves the taste of chicken?

Here's a vegetarian substitute that will surely gives a good taste of chicken to you - vegetarian chicken nuggets. It is made from wheat and soya.

You can use it as replacement for Adobong manok, tinola, menudo, asado and a lot more.

I know it's hard to give up chicken but in a gradual way you can do it!

Here’s a pattern that I want to share to those who are having hard time giving up meat. This may help.

Giving up Beef  first:

It’s not that hard , because you can still eat pork, chicken and fish. So do this for a month or two. Just make sure that you don’t eat beef anymore straight for a month.

Giving up Pork :

If you think that you can give up beef, it’s time for you to give up pork. You can still eat chicken and fish. It is easier to give up, knowing that pork is the primary cause of diseases. And we all know that it makes us fat since it is very high in bad cholesterol. Do this for a month or two. Just make sure that you don’t eat pork anymore straight for a month.

Then chicken:You will soon give up eating chicken. Maybe this will be hard for you so do this for two months or more , but make sure to give up eating chicken soon.

When you had already give up eating beef, pork and chicken it will be easier for you to go vegetarian or vegan. Don’t make it hard for you, there will always be an easier way that will help you achieve your goal. Going vegetarian does not end on giving up the food that you are conditioned to eat, it involves mindset, positive thinking, proper hygiene , a healthier lifestyle above all it develops control.

Tips on Substituting Meat

It is true that being vegetarian is hard.

It is hard specially when you are conditioned to the taste and texture of meat.

Now this condition is very common for us Filipinos since our country has a lot of festivities and celebration. Majority of the food served are meat based.

But what if there will be a substitute for meat? Still the same with the taste and texture of a real meat.

It will be a perfect chance for those who wanted to try giving up meat.

You can still enjoy the taste of meat without eating the real meat.

There are manufacturers of vegetarian meat substitutes here in Manila where you can buy them.

I made a list of Meat Substitutes that I recommend for vegetarian starters:

  • TOFU – you can use tofu as replacement for chicken. By just deep frying it the way you do to chickens you can achieve a tofu that tastes almost like chicken.

Vegetable Bouillabaisse Recipe

This is the recipe of Chef Jonathan Bautista of CCA which was assigned to Issa Quintos during the Electrolux Wok-A-Holic Kitchen Star Grand Cook-Off Challenge.

This is a Grand Finals Recipe:

Vegetable Bouillabaisse

Ingredients:
Egg plant, round slices 250 grams
Zucchini, round sliced 250 grams
Onion white, rings 200 grams
green bell pepper, mirpoix cut 200 grams
Red bell pepper, mirpoix cut 200 grams
Olive Oil for grilling (as needed)
Iodized salt, to taste
Crushed black pepper, to taste



Sauce:
Olive oil 5 Tbsp
White onion 75 grams
Crushed tomato, canned 5 cups
Water, as needed
Fresh thyme 5 grams
Capers 25 grams
Basil chiffonade 10 leaf
Iodized Salt, to taste
Ground black pepper, to taste

Garlic bread:
Unsalted butter, softened 200 grams
garlic, minced 150 grams
Focaccia bread, 15 lengthwise slices

Garnish:
Basil chiffonade 5 leaf
Pesto 5 Tbsp

Procedure:

For the vegetables
1. Season the vegetables with salt and pepper then drizzle with olive oil.
2. Grill the vegetables. Make sure not to burn and overcook it

For the sauce
1. Saute the onions and garlic. Add the crushed tomato then simmer until tomato is cooked
2. Add water
3. Simmer for a bit then add the capers, thyme and basil
4. Season with salt and pepper
5. Set Aside

For the garlic bread
1. Mix the garlic in soft butter
2. Spread the garlic butter in slices of Focaccia
3. Toast until crisp

To serve
1. Reheat the sauce
2. Dump in all the vegetables. Make sure not to overmix the stew
3. Season with salt and pepper

To plate
1. Pour the stew in a bowl then arrange the garlic bread in the plate
2. Garnish stew with fresh basil chiffonade, fresh thyme and pesto

Vegetarian Sinigang Recipe

It is hard to find Sinigang Mix that does not contain shrimp paste. But try looking at the ingredients of Knorr tamarind cubes and Mama Sita's Sinigang Mix it doesn't contain shrimp or pork.

Now ready to use as seasoning for our Vegetarian Sinigang.

Empanada Vegetal in Barcino Fort



Barcino is a wine house and Resto along The Fort Global City in front of The Mind Museum.  Located exactly at Unit 101 Forbeswood Heights, Rizal Drive, Bonifacio Global City, Taguig

Wines are usually paired with meat dishes but the good thing about Barcino is they offer interesting food for vegetarians.

During the flood I went to my Mom's pad at Forbeswood Heights and we had dinner at Barcino which is only downstairs where they lived. It was interesting that there's a lot of vegetarian options in their menu.

 

Because the food is expensive I just had an order of Empanada Vegetal
It tastes really really great, very crispy and the spinach were so fresh.

Vegetarian Chicken Nugget

Vegetarian Meat is being used to retain the taste and texture of meat.

Not really a meat because it is made from soy wheat. Non difference with the taste depends on how it was cooked.

In Bodhi stores, one of the best fake meat is Vegetarian Chicken Nugget.

Once you taste it you will not say that it's fake because the taste and texture is the same with real chicken nuggets.

This is one way of conditioning one's tongue in giving up meat. I hope can also help those who are having hard time giving up meat thru this guidelines if you want to give up eating meat:

How to Cook Vegetarian Batchoy

A round of applause to my partner Issa Quintos who made it to the Top 6 among the 14 contenders of Electrolux #Wokaholic Kitchen Star Boot Camp.

She was tasked to cook a Filipino dish na may sabaw. She thought of cooking vegetarian kare-kare but later on she decided to cook vegetarian batchoy, as suggested by her hubby Allen.

Vegetarian batchoy was her personal favorite when she was still a meat eater, but when she learned the vegetarian way of cooking she also learned cooking this kind of dish.

Tofu as Meat Replacement

Tofu: it's like Tokwa but it's softer. Tofu is great meat replacement because it is almost the same texture as meat when fried.

It was first used in China around 200 B.C.

It has long been a staple of Asian cuisine.

It soaks up flavors and is best when frozen for at least 30 minutes or served with a flavorful sauce.

The two types of tofu

  •  fresh, water-packed tofu (always refrigerated) for when you want the tofu to hold its shape, such as when baking or grilling,

  • silken tofu, which is packed in aseptic boxes and usually not refrigerated, for purring. Try firm or extra-firm tofu for baking, grilling, sauteing, and frying and soft or silken tofu for creamy sauces, desserts, and dressings. Silken tofu is used for making a heavenly chocolate cream pie but will fall apart if you try to make it into shish kebab.

  •  When baking tofu, cook it in a marinade so it will soak up more flavor. To give tofu a meatier texture, try freezing it for two to 24 hours and then defrosting it.


 

Press the water out of the tofu prior to preparing it. Wrap the tofu in a towel and set something heavy on top of it for at least 20 minutes, and it will be ready for marinades, sauces, freezing, and cooking.

It is also a good substitute for baking powder.

Nippon Tofu is a great substitute for egg

Benefits of Tofu:

It's a good source of protein since it belongs to soy products

Vegetarian Sinigang

My girlfriend is not a vegetarian but she loves me so much. Above all she loves it when I cook her sinigang.
What I usually do is use hugas bigas and put some seaweeds into it.

Ingredients

6 medium gabi

8 pcs ripe tomatoes

¼ sampalok

1 bunble sitaw

2 pcs raddish

2 pcs eggplant

5 pcs okra

1 bundle kangkong

2 TBSP spring onions

3 pcs tokwa or vegetarian fish

6 pcs siling haba

Soya patis

Salt and pepper

Oil

Higas bigas

  1. Slice tokwa in big squares. Add salt and fry. Set Aside

  2. Boil tomatoes (whole), gabi, sampaloc and salt in hugas bigas. When sampalok is cooked, scoop out. Continue boiling gabi and tomatoes. Mash sampalok in water starin back into the pot (or mash sinigangcubes in boiling stock)

  3. Add sitaw, kangkong stalks and spring onions. Cover and cook then add raddish, cover and cook some more

  4. Add eggplant, or add kangkong leaves. Add more sampalok water. About 2 tablespoons of oil (to resemnble pork fat) Season with soy patis. When all vegetables are cooked, remove from fire


5. Drop fried tokwa and siling pangsiganag into the pot. Serve Hot
