Empanada Vegetal in Barcino Fort
Barcino is a wine house and Resto along The Fort Global City in front of The Mind Museum. Located exactly at Unit 101 Forbeswood Heights, Rizal Drive, Bonifacio Global City, Taguig
Wines are usually paired with meat dishes but the good thing about Barcino is they offer interesting food for vegetarians.
During the flood I went to my Mom's pad at Forbeswood Heights and we had dinner at Barcino which is only downstairs where they lived. It was interesting that there's a lot of vegetarian options in their menu.
Because the food is expensive I just had an order of Empanada Vegetal
It tastes really really great, very crispy and the spinach were so fresh.

How to Cook Vegetarian Batchoy
A round of applause to my partner Issa Quintos who made it to the Top 6 among the 14 contenders of Electrolux #Wokaholic Kitchen Star Boot Camp.
She was tasked to cook a Filipino dish na may sabaw. She thought of cooking vegetarian kare-kare but later on she decided to cook vegetarian batchoy, as suggested by her hubby Allen.
Vegetarian batchoy was her personal favorite when she was still a meat eater, but when she learned the vegetarian way of cooking she also learned cooking this kind of dish.

The easy way of becoming vegetarian
Thinking about becoming a vegetarian is easy but giving up your favorite hamburger is hard. The tongue is conditioned to the taste of meat so no matter how you try

If you are around UP Diliman or Katipunan and you're looking for a vegetarian place to eat
I recommend Likha Diwa Sa Gulod. But be patient when eating here because of the slow service.

Tofu as Meat Replacement
It was first used in China around 200 B.C.
It has long been a staple of Asian cuisine.
It soaks up flavors and is best when frozen for at least 30 minutes or served with a flavorful sauce.
The two types of tofu
- fresh, water-packed tofu (always refrigerated) for when you want the tofu to hold its shape, such as when baking or grilling,
- silken tofu, which is packed in aseptic boxes and usually not refrigerated, for purring. Try firm or extra-firm tofu for baking, grilling, sauteing, and frying and soft or silken tofu for creamy sauces, desserts, and dressings. Silken tofu is used for making a heavenly chocolate cream pie but will fall apart if you try to make it into shish kebab.
- When baking tofu, cook it in a marinade so it will soak up more flavor. To give tofu a meatier texture, try freezing it for two to 24 hours and then defrosting it.
Press the water out of the tofu prior to preparing it. Wrap the tofu in a towel and set something heavy on top of it for at least 20 minutes, and it will be ready for marinades, sauces, freezing, and cooking.
It is also a good substitute for baking powder.

My girlfriend is not a vegetarian but she loves me so much. Above all she loves it when I cook her sinigang.
What I usually do is use hugas bigas and put some seaweeds into it.
Ingredients
6 medium gabi
8 pcs ripe tomatoes
¼ sampalok
1 bunble sitaw
2 pcs raddish
2 pcs eggplant
5 pcs okra
1 bundle kangkong
2 TBSP spring onions
3 pcs tokwa or vegetarian fish
6 pcs siling haba
Soya patis
Salt and pepper
Oil
Higas bigas
5. Drop fried tokwa and siling pangsiganag into the pot. Serve Hot

- Boil tomatoes (whole), gabi, sampaloc and salt in hugas bigas. When sampalok is cooked, scoop out. Continue boiling gabi and tomatoes. Mash sampalok in water starin back into the pot (or mash sinigangcubes in boiling stock)
- Add sitaw, kangkong stalks and spring onions. Cover and cook then add raddish, cover and cook some more
- Add eggplant, or add kangkong leaves. Add more sampalok water. About 2 tablespoons of oil (to resemnble pork fat) Season with soy patis. When all vegetables are cooked, remove from fire
5. Drop fried tokwa and siling pangsiganag into the pot. Serve Hot

My Journey to Buon Giorno!
Buon Giorno Caffe and Bistro, Rockwell Business Center, Pasig City, Philippines
It opened in Tagaytay in 2005, then it becomes a favorite relaxing escape for Italian dish lovers. Now it's here at the heart of Manila along the Rockwell Business Center in Pasig.
Yes, there's a new Buon Giorno Caffe for the foodies in the Metro. Now what I am looking forward in an Italian Restaurant is their pesto and pizza.
One of the pizza they do offer is called Quattro Formaggi - a beautiful blend of fontina, mozzarella, parmesan and gorgonzola cheeses. It comes in thin crust, but just the right crunch to it.
And for their pasta, their best seller is Cannelloni Spinaci.
I am going to taste their vegetarian pizza.

Crispy Kangkong
I would like to thank Ate Nimfa Chua for treating me Garlic Rice, Crispy Kangkong and Buko Juice at Mang Inasal Tomas Morato today.
After covering the Playboy event at San Juan, we hitched on TV 5's crew van going to our way home. But before going home we went first at Tomas Morato to eat out.
Upon learning my order, she asked me a few questions:

Simple Avocado-and-Tomato Sandwiches

Avocado and Tomato Sandwiches
These simple sandwiches are perfect when you only have a few minutes to whip up lunch. The creamy avocado and sweet tomato are satisfying and easy to pack.
- Hummus
2 slices thick-crusted sourdough bread
4-6 avocado slices
1-2 leaves lettuce
2 thick tomato slices
• Spread desired amount of hummus on both slices of bread.
• Place avocado slices, lettuce, and tomato in between.
Makes 1 sandwich

10 Most Common Questions to a Vegan and Vegetarian
A few days ago , I shared the questions and answers of Nancy Siy about her becoming a vegan, the way she does veganism is not a joke. It is a serious move that involves life principles and a matter of choice. Here's another common questions to vegetarians/vegan and her answers as I interviewed her via facebook.

10 Most Common Questions (and answers) people who first find out I’m vegan ask me:
1. So you eat fish?
Of course not. Fish are animals too.
2. What do you eat?
Vegetables, legumes, grains, fruits.
3. Where do you get your protein?
Soy products, nuts, etc.
4. Where do you get that discipline?
It does not require any discipline. Does it require discipline for a "meat-eater" not to eat a monkey or a horse?
5. Don't you miss meat?
No. Meat is disgusting.
6. What's the difference between a vegetarian and a vegan?
A vegan subscribes to the whole philosophy of abstaining from any animal use in as much as it is possible. This extends to clothing choices, bathroom product purchases, entertainment choices, etc on top of the normally associated food intake.
7. What made you turn vegan?
Realizing that my choice to eat meat harmed others- the animals, the environment, the hungry people in other parts of the world.
8. So you don't eat junkfood or drink softdrinks?
I still eat junk food like potato chips but not as often anymore. There's so much better food to eat than junk. I drink softdrinks from time to time, that's only because I like the taste of rootbeer. I do not drink any Coca Cola products because Coke has many human rights violations. Check out killercoke.org for more information.
9. (In a restaurant, upon receiving their plates with meat dishes) Sorry, is it okay if we eat meat in front of you?
It depends on the situation. Sometimes I would say "I prefer that you do not, but I cannot control your choices" or "I would appreciate it if you do not". If they already have their "food" in front of them, it is kind of pointless. But if they ask before their order, I would definitely encourage them to try the non-animal food items.

Is this a joke? V-e-g-a-n.
