Adobo is one of the easiest ulam to cook for us Filipinos. It can be an Adobong Baboy or Manok. Now if you're going to cook a Vegetarian Adobo, all you need to replace is the pork or chicken. You will now use a vegetarian meat substitute - Tofu.
Vegetarian Adobo Ingredients:
2 blocks of Tofu
2/3 cup soy sauce
2/3 cup vinegar
10 cloves of garlic, crushed
Salt to taste
1 Onion bulb
1 Laurel leaf
Vegetarian Adobo Preparation:
- Cut your Tofu into 2-inch cubes.
- Add the soy sauce, vinegar, sugar, cloves of garlic, black pepper, and laurel leaf.
- Optional: You can marinate in Sprite or 7up
- Bring to a medium boil for 15 minutes.
- Cover and reduce heat to simmer for 30 minutes.
- Stir once in a while to avoid burning the bottom.
- Serve with rice.
